Mike Ham, Executive Chef and Partner, learned to make sushi in Jacksonville, Florida while working as an accountant. During a long-term project, he became a regular at a local sushi restaurant and was intrigued by the chef. He eventually left his accounting job and studied the art of sushi with the chef before joining him to travel the country and perfect his craft. In 2004, he opened his first restaurant and earned the nickname Sushi Mike. Now part of the Union family, he expertly combines classic sushi with modern technique and a variety of fresh ingredients.More About Us
